To be honest, any flavoured macaron will go amazingly with Champagne. If I could turn back time, I would have suggested a berry flavoured filling. Perhaps a cream cheese and raspberry filling with a plain almond shell?
Here’s a simple recipe you could try:
Raspberry and Cream Cheese filling
Prepare filling the night before…
100g cream cheese, softened
1 cup icing sugar
1/4 cup fresh raspberries (or if you’re lazy, seedless raspberry jam will work too)
1. Using an electric mixer (unless you want tired arms), beat cream cheese until light and fluffy.
2. Add icing sugar and beat until combined.
3. Add raspberries/raspberry jam and l beat in lightly. Allow to chill in fridge overnight.
An alternative method you could try is beat the cream cheese and icing sugar, place a whole raspberry in the centre of the macaron shell for a surprise fruity centre!
