The Ultimate White Choc & Raspberry Macaron.
So, I know I’m skipping a few other macarons I’ve made, but I thought I’d post what I’m working on at the moment.
I’ve been making macarons for a breast cancer fundraiser on the weekend. I’m also going to be making macarons for my niece’s 3rd birthday next week, so I thought I’d use this as an opportunity to trial a few ideas I’ve had for her party.
Today, I drew inspiration from Adriano Zumbo’s Easter Egg Yolk recipe (in his recipe book ‘Zumbarons’, which will now be known as my Bible), in which he encases a passionfruit gel in chocolate and places the chocolate in the centre of the macaron, so when the macaron is bitten into, yellow gel oozes out giving the effect of egg yolk.
I tweaked it a little.
Since I had made pink macaron shells, and white macaron shells with pink ribbons piped on them (in coloured macaron mixture), I decided to use the same recipe, but using raspberry instead of the passionfruit. I also made the chocolate casing (for the raspberry gel) from white chocolate, and used a white chocolate ganache.
This is the first time I’ve used Pectin (to make the raspberry gel), and also the first time I’ve tempered chocolate. They were both big successes!
These flavours compliment each other so well, especially since the raspberry is quite tart, and the ganache and macaron shell are so sweet.

Oh, I do love a good surprise inside a macaron. Such a great idea. Must try this out some time.
Is it just me or, do these macarons look like mouths, sticking their tongue out?
Don’t you just love all the things Melbourne has to offer? Although nothing beats traveling the world, these little gems may just be enough to control those annoying post travel depression symptoms. Which one of these places have you been to? Onsen Ma certainly caught my eye…

OH! There is definitely titanium dioxide present in these macarons. Hrmm… Although pure white macarons look fabulous, I’m still undecided about it using titanium dioxide in my macarons. Anybody out there available to convince me?
